Wild Thistle Honey
The untamed character of the Sardinian countryside
Wild thistle (Cynara cardunculus and Galactites tomentosa) dots every Sardinian summer with its purple heads defying the scorching sun.
A tough plant, defended by thorns, chosen by bees as their favorite nectar source during the hot months. Those who have seen the countryside of Nuorese or Ogliastra in July know what we mean: stretches of purple as far as the eye can see, a landscape unique in the world.
Its honey carries all that character: amber-colored, with intense herbal notes, slightly balsamic. It has the decisive personality of the territory it comes from — it cannot be confused with any other honey in the world.
Intense herbal, slightly balsamic, with notes of dry hay and Mediterranean resins. Sweet balanced by pleasant freshness.
