Immortelle Honey
The immortal of the maquis — irreproducible
Immortelle (Helichrysum italicum) is called 'everlasting' because its flowers never wither, even when cut. It is the iconic shrub of the low Sardinian maquis, the one that permeates the air with a spiced fragrance during summer walks.
The Sardinians used it as a natural remedy from time immemorial — and bees choose it above all other summer flowers.
The resulting honey is the rarest in our production: a blend of spiced notes reminiscent of curry, dried flowers, warm resin and a very long finish of medicinal herbs. There is nothing comparable anywhere in the world. Sardinia as you have never tasted it.
Spiced, with dominant notes of curry and dried flowers. Warm resin, incense, medicinal herbs of the Sardinian maquis. Very long and unmistakable finish.
