Arbutus Honey
The most bitter in Europe. The most precious.
The arbutus tree (Arbutus unedo) is the most fascinating botanical anomaly in Sardinia: it blooms in October, when the rest of the world goes into hibernation.
The small white bells bloom between November and December, just as the red fruits from the previous year ripen on the branches — a botanical rarity that has inspired Nuragic legends and fascinated botanists worldwide.
The resulting honey is unique: intense, persistent bitterness, almost medicinal. A taste that divides — either you love it deeply, or you don't understand it at first. The Sardinians call it 'su mele de s'aba', the bee's honey. It is their secret treasure, traditionally consumed as a natural remedy and offered to the most special guests.
Production is extremely limited: autumn blooms depend on rain and climate, making each jar a small seasonal rarity.
Intense and persistent bitterness, with notes of coffee, cocoa, resin and medicinal herbs. Very long finish. An experience, not just a honey.
