Rosemary Honey
The first awakening of the Sardinian year
In Sardinia rosemary (Salvia rosmarinus) blooms as early as February, when the rest of Italy is still wrapped in cold.
It is the first flower of the new year, the announcement of the coming spring, the signal for which our bees leave the winter cluster to start working again. On the coasts of Sulcis and Gallura, stretches of wild rosemary transform the cliffs into white and bluish carpets.
Rosemary honey is one of the whitest and most crystalline that exist — almost alabaster after crystallization. Delicate but unmistakable aroma, clean herbal notes. The delicacy of the first day of Sardinian spring.
Delicate rosemary aromatic, clean herbal notes and crystalline sweetness. Very fresh. The first honey of the year.
